Beef is great, you just stick your hands in and mould it all together. When you mix haggis and beef mince, you need to knead it all together a bit. The mince is much pinker than the haggis, so you can tell when it's mixed enough, the colour evens out, and there aren't clear lumps of haggis anymore. It also becomes easier to shape.

  2. Next add porridge oats and flour then black cracked Pepper.

  4. I made 5 1/4 pounders out of this but you could get 8 normal size burgers.
  5. Add them to a grill or frying pan and cook both sides for 4 minutes until hot right through as the meat is all cooked anyway. With the back of a tbls dig slightly hollow for the cheese
  6. When heated through add the Grated cheese on top and grill until melted. Add to your favourite burger buns and serve hot with salad.

I love haggis but couldn't find anything decent here in the States. While it was cooking, I could tell it was close to authentic. Amazing recipe - thank you for sharing. Perfect combination of small onions, butter, plain flour, tomato puree, red wine, beef stock and whisky makes it the best sauces for haggis.
