Veg tahiri or veg tehri is an aromatic, spiced one pot rice & vegetable based dish from the Uttar Pradesh cuisine. Veg tehri is a medley of mixed veggies, rice and spices from the Awadhi cuisine. Tehri or tahiri is a close cousin of biryani or pulao.

The ingredients needed to make Tehri/Tahiri:
- Take 2 large Potatoes
- Get 1 cup chopped Cauliflower florets

- Take 2 sticks each of 1 inch Cinnamon
It is an aromatic, spiced, one-pot rice dish and is commonly eaten as a wholesome meal in Uttar Pradesh. Hailing from Lucknow, I have many a time binged on Tehri especially when my mom used to have a busy schedule. Ah! a weekend treat for us accompanied with raita or kachumber salad. Veg tehri recipe - Tehri, tehari or tahari is a one pot dish originated from the Awadhi cuisine.
Instructions to make Tehri/Tahiri:
- Rinse basmati rice in water very well.
- Drain and keep aside.
- Chop and wash the veggies and keep aside.
- Heat 3 tbsp ghee in a thick bottomed deep pot or cooker.
- Add whole spices.
- Then add sliced onions.
- Stir and sauté the onions till golden in colour.
- Then ginger+garlic paste and saute till the raw aroma of ginger and garlic goes away.
- Add chilli powder, turmeric and garam masala powder.
- Add chopped tomatoes and sauté the tomatoes for a minute or two.
- Add salt.
- Add all veggies and mix well with the rest of the ingredients.
- Then add rice and mix very well with the masala and saute for a minute.
- Add 2 and 1/2 cups water.
- Close the lid and cook till rice will done or in cooker cook for 1 whistle.
- When it done open the lid and garnish with coriander leaves and serve with raita.
It is mildly spicy, delicious & flavorful. It is most commonly eaten for a meal in North India. This is a variation of the Veg pulao recipe, but includes spice powders too. Tahri (also tehri, tehari or tayari) is a yellow rice dish in Awadhi cuisine. Spices are added to plain cooked rice for flavor and colour.
