The ingredients needed to make Tehri:
  1. Get 2 cups long grain basmati rice,washed and soaked for an hour
  2. Make ready 1/2 cup boiled peas
  3. Take 1/2 cup carrots chopped finely
  4. Make ready 1 medium sized potato
  5. Prepare 1/2 cup cabbage boiled
  6. Take 1/2 cup small paneer cubes,
  7. Get 3 tbsp mustard oil (or desi ghee)

  9. Make ready As requried Whole Garam Masala
  10. Prepare 2 Bari Elaichi
  11. Make ready 4-5 laung
  12. Make ready 6-7 Black pepper powder
  13. Make ready 2 Bay leaves
  14. Make ready 3-4 pc dalchini
  15. Take 4-5 choti Elaichi
  16. Make ready 1 tsp garlic paste
  17. Take 1/2 tsp ginger paste
  18. Prepare 2 tbsp onion paste
  19. Prepare 1 tsp fresh tomato puree
  20. Get 1/2 tsp haldi powder
  21. Get 1 tsp red chilli powder
  22. Take 1 tsp dhania powder
  23. Take 1/2 tsp garam masala powder
  24. Get to taste Salt

Veg tehri recipe - Tehri, tehari or tahari is a one pot dish originated from the Awadhi cuisine. It is mildly spicy, delicious & flavorful. It is most commonly eaten for a meal in North India. This is a variation of the Veg pulao recipe, but includes spice powders too.

Steps to make Tehri:
  1. Strain the rice and keep it aside.
  2. Take a pan, add 1 tbsp oil, heat it, add veggies, stir fry them till light brown, keep aside.
  3. Take a big pressure cooker, add oil or ghee, heat it.
  4. Add whole garam masala, saute it for a while.
  5. Add ginger garlic paste, add little water and saute it for a while.
  6. Now add onion paste, again add lil water, stir fry it for a while.
  7. Lower the flame now, cover it with the lid, cook it until brown. Stir in between.
  8. Open the lid now, add tomato puree & salt, mix it well, cook it and cover it with the lid, till oil separates.
  9. Now add haldi, dhania & red chilli powder, add little water, increase the flame, stir fry it till oil separates.
  10. Now add garam masala powder, give a stir.
  11. Add veggies & rice, stir fry it for a while.
  12. Now add water accordingly so as to keep the dish dry, stir it.
  13. Increase the flame and pressure cook it for 4 whistles.
  14. Turn off the flame, open the lid and let it cool for 5-7 minutes of cooling.
  15. Take out in a serving dish, garnish it with chopped dhania patta.
  16. Have it with ghee.
