Tahri (also tehri, tehari or tayari) is a yellow rice dish in Awadhi cuisine. Spices are added to plain cooked rice for flavor and colour. In one version of Tehri, potatoes are added to the rice. This dish is most popular in Hyderabad and Nanded.
Instructions to make Tehri:
- Soak the rice for 10 minutes. Wash away the water and keep aside. Chop all veggies. Heat oil in a cooker. Add jeera and bay leaves.
- Add in onion and ginger. Cook till onion is golden brown. Add in chopped veggies along with tomatoes.
- Add hing and turmeric powder. Mix well. Add rice.
- Add in salt chilli powder and coriander powder.
- Mix well till rice turns translucent. Add in double the quantity of water as to rice. Cook for 3 whistles. Let steam escape automatically. Tehri is ready.
- Serve tehri along with raita and crispies. Enjoy.
