The ingredients needed to make Tehri:
- Get 2 cups basmati rice
- Make ready 2 black cardamom
- Make ready 4-5 green cardamom
- Prepare 5-6 cloves
- Prepare 1 tsp cumin seeds
- Take 1 inch cinnamon
- Make ready 1 star anise
- Make ready 1 bay leaf
- Make ready 3 small onions, sliced
- Make ready 1 large tomato, chopped
- Take 2 cups vegetables(potato, cauliflower, peas, beans, carrot)
- Make ready 1/4 cup soya nuggets, soaked and squeezed
- Take 1/2 tsp turmeric powder
- Take 2 tsp red chilli powder
- Make ready 1 tsp cumin powder
- Take 1 1/2 tsp coriander powder
- Get 1 tsp garam masala
- Make ready 1 tbsp ginger garlic paste
- Get 1 tsp green chilli paste
- Get 2 green chillies, slit
- Make ready 1/4 cup oil/ ghee
- Take 1.5 tbsp salt
- Make ready 1/4 cup oil
- Make ready 200 gms curd
- Take 1 tbsp kewra water
- Prepare 4 cups water
- Take 1 tsp lemon juice
This is one of my favorite childhood meals. Tahri (also tehri, tehari or tayari) is a yellow rice dish in Awadhi cuisine. Spices are added to plain cooked rice for flavor and colour. In one version of Tehri, potatoes are added to the rice.
Steps to make Tehri:
- Heat oil in a pressure cooker. Add the whole spices and green chillies and let them splutter. Next add the sliced onions and cook till light golden in colour.
- Add the ginger garlic paste, green chilli paste and tomatoes. Cook till tomatoes are tender. Add the curd and all the dry spices. Saute for a few minutes. Add the vegetables, soya nuggets, lemon juice and salt and cook in the masala for a few minutes.
- Next add the required quantity of water and the kewra. Let the water come to a boil. Add the washed and soaked basmati rice. Cover with the lid and cook for one whistle on high flame. Switch off the flame. Let the cooker release all the pressure on it's own before opening the lid. Give the tehri a good mix. Serve hot. Enjoy!
