- Make ready 3 tbsp Green Coriander Leaves chopped
This all made in one-pot rice based dish with wonderful aromatic spices makes a quick and easy to make lunch! Tehri or tahiri is a close cousin of biryani or pulao. Veg tahiri or veg tehri is an aromatic, spiced one pot rice & vegetable based dish from the Uttar Pradesh cuisine. Veg tehri is a medley of mixed veggies, rice and spices from the Awadhi cuisine.
Instructions to make Vegetable Tehri:
- Wash and soak basmati rice in enough water for at least half an hour. Drain excess water and remove rice in strainer and keep aside.
- Heat oil in pot or pressure cooker. Add jeera, bay leaf, cloves, green cardamom, black cardamom and cinnamon stick. Saute for a minute.
- Once jeera splutters add sliced onions and saute till it turns translucent and then add ginger garlic paste and cook for a minute.
- Add sliced capsicum and green peas. Mix well. Further add vegetables and tomatoes, mix well and add turmeric powder, red chilli powder, dhania jeera powder, garam masala and salt. Mix all well. Cook for 2 to 3 mins on medium flame.
- Add drained rice, water and gently mix and bring it to a boil on high flame. Once it boils lower the flame to medium and cover with the lid and cook till rice is cooked completely.
- Garnish with chopped green coriander leaves and serve vegetables tehri with raita or papad.
