Steps to make Aloo ki Tahiri:
- Wash & soak rice for 10-15 minutes (according to your rice type).heat oil in a pot.Add zeera, black pepper& whole red chilli.let them pop.add sliced onion & fry to light golden.add ginger garlic paste.fry till smell ends.add whole tomatoes with 1/2 cup water.cover & cook till tomatoes skin peel off in steam. Remove skin & mash tomato flesh in oil.add red chilli powder, salt,haldi, cinnamon stick & fry masala to a paste till oil seprates.add 2 green chillies also.
- Peel off potatoes,cut in quarters & wash thoroughly.add potatoes in masala.mix well.cover & cook on low flame till potatoes are soft.add 1/2 cup water if needed.when potatoes are soft & fried well in masala.add drained rice with 3 1/2 cups of water.let them cook over medium heat till water is absorbed & rice are tender.add green chilli at top of rice.cover & put on dam for 10 minutes over low heat.serve with raita,achaar,mint chutney & enjoy with Cookpad.
