Tahri is a yellow rice dish that has many variations in Pakistan and north India. A quick Google search tells me that the dish is considered part of Awadhi cuisine, which is native to Lucknow, a major culinary center in north India. - Soak rice in a water for 20 min. Deep fry the Cauliflower Florets and potatoes.
- Heat oil in pressure cooker. When heated add cumin seed, dalchini, bay leaves, long,badi elaichi, kali mirch, star anise and whole red chillies.
- Now add onions and saute till become golden. Add ginger garlic paste and cook for 2 min.
- Add all the veggies except green peas. Cook for 2 min. Now add red chilli powder, corriender powder and garam masala powder.
- Cook until oil get separated. Now add soaked rice to it and cook it for 2 min. Stir it countinusly otherwise rice can stick to the bottom.
- Add 2 tsp ghee in it. Add green peas and mix well.
- Add 2 cup hot water. Close the pressure cooker lid and cook for 1 whistle.
- Serve hot with Curd.
