I start with the oil, shallots, ginger, garlic - combine well. Continue the slow cooking process until the mutton pieces are cooked according to your liking. Also check and adjust the seasoning if needed. Give a good stir and bring it to boil.

Steps to make Mutton curry (in slow cooker):
  1. Dry roast the spices (cumin, coriander, peppercorn, red chilli, cloves, cardamom, cinnamon, nutmeg) and mix well with yoghurt, ginger paste and turmeric to make a paste and apply to mutton and keep refrigerated for 12hrs.
  2. Fry the potatoes separately and keep aside, similarly fry the onions with green chilis and garlic till it turns brown.
  3. Pour the mutton mix over the same pan with the gravy and potatoes and sauteed for few minutes.
  4. Transfer the contents to slow-cooker and turn it high for 2hrs flipping in between and serve hot with steamed rice.

In a slow cooker, add the marinated lamb, cooked onion mixture, three tablespoons oil, green chillies, meat masala, red chilli powder, coriander powder, garam masala, fennel, salt, tomato puree and water. Top with chopped cilantro and serve hot with rice/ parathas/ naan. Personally, I like cooking on low so the meat is moist, juicy and fork-tender Plug in your slow cooker and let it warm up with the lid off. Heat the oil in a large frying pan and and add in the diced onion. Add the garlic, curry powder, ground coriander, ground cumin and paprika and cook for another couple of minutes, stirring all the spices into the onions.
