- Let them cook for a few minutes before turning off the flame.
- Meatballs in coconut sauce - - Get your meat balls ready. I had about 5 left over. Saute your onions, tomatoes,tomato paste, garlic, ginger, and any other preferred spices. Add some coconut milk and throw in the meatballs. Let them cook till ready.
- For the creamed spinach - - Saute your onions, and garlic till translucent. Pour in a little cream (I used coconut cream) before adding the spinach. Let them cook for a few minutes.
- Serve and enjoy. Adjust salt and spices to suit your taste.
Stir in the spinach, if using. Serve with spaghetti or rice and lots of grated Parmesan cheese. I do remember that I had purchased some palak spinach but hadn't paid much attention when I did it. So many of the leaves were in bad shape and rotting, there was too little left to actually use the spinach as a vegetable side. I decided to cook it in a bit of garlic and mix it with the meatballs.
